Roasted Pork Pancakes with Apple, Carrot and Jalapeno Slaw and Hard Cider Drizzle

Are you ready for some Roasted Pork Pancakes with Apple, Radish and Jalapeno Slaw and Hard Cider Drizzle on Winter Squash Pancakes?
This is one EXCITING recipe. Savory, sweet, spicy, full of FLAVOR that your taste buds are going to LOVE. I mean you just can’t go wrong with Winter Squash Pancakes topped with the earthiness of a simple roasted pork shoulder, sweet and spicy slaw, and a drizzle of gingery, garlicky hard cider. YUMMY!

Roasted Pork Pancake Substitutes
If you’re not a fan of roast pork or just don’t have any, that’s OKAY. You can use leftover roasted turkey or chicken. I’ve also used roasted duck in this recipe. YUMMY! Btw, this is an INCREDIBLE recipe for using up leftover Thanksgiving turkey.
Don’t have apples for the slaw? Fine. Use pears, cabbage, or kale. It’ll still be tasty, and the flavors will pair well with this combo. Just don’t skip the slaw. The vinegary, crunchy contrast is beautiful with the soft pancakes and pork.
For those on the gluten-free diet, you’ll want to use gluten-free flour when you make the Winter Squash Pancakes.
AND you can always substitute regular cider for the hard cider or use apple juice. Or switch to your favorite ale or lager. What you don’t want to do is skip the drizzle. It’s like cold vanilla bean ice cream on a slice of hot apple pie. That finishing touch that takes this dish over the top!

Easy to Make and Healthy to Serve
I KNOW this recipe can look a little intimidating since it has so many different parts. BUT it really is an easy recipe to make. Shredd up the leftovers from a pork roast, chicken, or turkey. Make up the pancakes and slaw a day ahead. They are both better after the flavors meld anyway.
This dish is perfect for serving guests or your family since everything can be prepared ahead.
And it’s healthy. You have whole wheat, superfood fall squash, apples, carrots, and jalapeno. Yay, for both extremely tasty and healthy. I don’t know about you, but I like healthy food that tastes good and makes me feel like I’m cheating on my diet. This is one of those dishes. Guilt free enjoyment is what I call it.
Not to mention everyone will love it, including the kids. Afterall, who doesn’t love pancakes!

Apple, Carrot and Jalapeno Slaw
Ingredients
- 1 large Honeycrsip apple sliced into matchsticks
- 1 large jalapeno sliced into matchsticks or finely chopped depending on heat level
- 2 medium-sized carrots sliced into matchsticks
- 3 large red radishes sliced into matchsticks
- ½ small bunch fresh cilantro (coriander) roughly chopped
- 1 large lime juiced
- 1 tbsp white vinegar
- Salt and pepper to taste
Instructions
- Mix all ingredients into a small bowl.
- Place slaw in the fridge to meld for at least one hour.
Notes
Hard Cider Drizzle
Ingredients
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 tbsp fresh ginger finely grated
- 1 12-ounce bottle dry hard cider I used Snow Capped Cider
- 1 tbsp honey
- salt and pepper to taste
Instructions
- Warm olive oil in a small saucepan over medium-low heat.
- Add garlic and ginger, cooking for about one minute or until fragrant.
- Pour in hard cider or your choice of liquids.
- Bring to a light boil and allow cider to simmer until reduced by half.
- Add honey and season to taste with salt and pepper.
- Drizzle over your dish of choice to serve.

Roasted Pork Pancakes with Apple, Carrot and Jalapeno Slaw and Hard Cider Drizzle
Ingredients
- 3 cups shredded roasted pork or use turkey or chicken
- 1 batch Fall Squash Pancakes
- 1 batch Apple, Carrot and Jalapeno Slaw
- 1 batch Hard Cider Drizzle
- 5-6 stems fresh cilantro (coriander) for topping
Instructions
- Lay a pancake on a plate. Followed by 1/4 cup roasted pork, 1/4 cup slaw and then drizzle on or around with the Hard Cider Drizzle. Top with a few cilantro leaves for the finishing touch.
