Roasted Cherry Tomatoes and Garlic with Herbs de Provence (Vegan)

My lovely friend Jacky got me HOOKED on Roasted Cherry Tomatoes. After eating these SWEET babies at her place a few times, I HAD to start making them at home. And share them with you because you don’t need to miss a treat like this.
Jacky makes hers with a bit of salt, pepper, and olive oil. Absolutely delicious and you CANNOT go wrong. You know me though. I gotta add my own twist. So, I added garlic cloves and Herbs de Provence to mine. Oh YEAH! Loved the floral notes the herbs added to the flavor. And you just can’t go wrong with roasted garlic.
And the beauty of Roasted Tomatoes? So, many ways you can make them. I’ve been roasting mine, then adding fresh basil, and extra olive oil for serving.
Roasted Cherry Tomato Flavor Variations
There really is no limit to how you can flavor your Roasted Cherry Tomatoes with Garlic. Start with the basics – olive oil, salt, and pepper. Then add any of these suggestions or your favorite combination:
- 1 Tablespoon Balsamic Vinegar
- 1 teaspoon dried rosemary
- 1/2 teaspoon red chili flakes
- 2 Tablespoon fresh herbs – basil, rosemary, oregano, and/or thyme (add chopped fresh herbs AFTER roasting)
- 1 teaspoon Italian seasoning

Substitutions
While they will take longer to roast, you can switch out the cherry tomatoes for Roma tomatoes. You’ll also need to increase the amount of ingredients, but Romas make beautiful roasted tomatoes, as well.

How to Use Your Roasted Cherry Tomatoes
ANYTHING you would use sun-dried tomatoes; you can use Roasted Cherry Tomatoes. These bad boys are DELICIOUS on their own as well. Add them to pasta, pizza, or serve as a bruschetta on toasted bread. Toss them in a food processor or blender, with a handful of nuts, grated parmesan, several of the roasted garlic cloves, some lemon juice and make a Roasted Cherry Tomato Pesto. Seriously, you can use them with ANYTHING.
I serve them with both toasted bread and my homemade crackers with a nice cheese on nibbles boards. Yep, the crackers in the photos are homemade and I’ll be sharing the recipe for them SOON. Roasted Cherry Tomatoes and Garlic with Herbs de Provence
Ingredients
- 1 cup cherry tomatoes halved
- 5 or 6 cloves garlic or a small head broken apart
- 2 tbsp olive oil
- 1 tsp Herb de Provence
- salt and pepper to taste
Instructions
- Preheat oven to 375 F (200 C). Line a baking sheet with parchment paper.
- Cut tomatoes in half and add to a bowl with garlic cloves.
- Drizzle with olive oil, Herb de Provence, and season with salt and pepper. Gently toss to coat, then pour into the prepared baking sheet.
- Evenly spread tomatoes and garlic on pan, then place in the oven until roasted. Skins will slightly blacken and tomatoes will be drying out.
- Remove from pan. Serve warm with cheese and crackers or pasta.
