Fall Turkey Salad with Cranberries, Apple, Kale and Walnuts
I love leftover Thanksgiving turkey.
In fact, I always buy a bigger turkey than we need so that we have plenty of leftovers.
I love thick slices of turkey breast on white store-bought sliced bread with mayo.
I know it’s horrible. But it’s comfort food from growing up that I just haven’t lost the taste for.
I make most of my sandwiches on good healthy bread but I still desire that simple one which reminds me of growing up.
This year, we’re trying to eat more grown up. Instead of eating all the white meat on sandwiches I made Fall Turkey Salad with Cranberries, Apples, Kale and Walnuts. And served it up on a bed of fresh arugula.
I still ate a couple of those horrible sandwiches on white bread with mayo first! But I have to admit the Fall Turkey Salad on arugula is tasty.
And while I still love my sliced turkey sandwich, this Fall Turkey Salad is a new favorite. Plus, I can eat it on bread as well.
Oops, my bread weakness is showing again.
Regardless of how you like your leftover turkey, I think you’ll love this Fall Turkey Salad.
It’s an awesome blend of sweet, earthy and sour. Sweet dried cranberries and apples. Earthy kale, walnuts and meaty turkey. Fresh lemon thyme and rosemary with stone ground mustard and lemon. Finished off with a good mayo.
How can anyone go wrong with those flavors.
This Fall Turkey Salad with Cranberries, Apples, Kale and Walnuts is easy to serve and easy to change.
Serve on a bed of fresh leafy greens, in lettuce or tortilla wraps or on a tasty bread. Or use it on crackers or cucumber slices.
Change it up by adding in your favorite dried fruits, or swapping the apple for pear. Add crunch with your favorite chopped nut or toss in some finely chopped onion and garlic.

Turkey Salad with Cranberries, Apples, Kale and Walnuts
Ingredients
- 3 cups leftover white meat turkey chopped
- 2 large kale leaves chopped small
- ½ cup dried cranberries
- ½ cup walnuts chopped
- ½ medium apple chopped
- 1 tsp. fresh lemon thyme chopped
- 1 tsp. fresh rosemary chopped
- ½ to ¾ cup mayo use to desired constancy
- 2 to 3 Tbsp. stone ground mustard to taste
- ½ lemon juiced
- Salt and Pepper to taste
- Salad greens or bread for serving
Instructions
- Chop all ingredients and stir together in a medium-size bowl. Start with the smaller amount of mayo and mustard, adding to reach your taste and desired constancy.
- Serve immediately slightly warm or at room temp. or allow time for flavors to meld.
