Day 5 of the Simply Sophisticated Cooking 13-Day Holiday Challenge is a chocolate pancake mix gift bag.
Nothing says the holidays like warm homemade chocolate pancakes on Christmas morning. Especially when you top them with real maple syrup or a cranberry and mint topping or whatever your favorite toppings are.

How to Make Your Chocolate Pancake Mix into a Gift Pack
Turning chocolate pancakes into a gift pack is easy. Box all the mixed dry ingredients into a cute container – I recommend a reusable glass jar. Add a small bottle of vanilla and the recipe card with instructions on the side and you have a completed chocolate pancake mix DIY gift.
Or of course, you could make them extra special by adding some chocolate chips for chocolate chip chocolate pancakes. For this recipe, you’ll need about 1/2 cup of chocolate chips. I recommend using dark chocolate but it’s totally up to you.

Other Suggestions for Your Chocolate Pancake Mix Gift Bag
Want a few extras in your gift bag? Add a bottle of maple syrup. Or a container of cocoa powder for hot chocolate on Christmas morning. Or include some cookware pieces such as a nonstick griddle for cooking the pancakes on or a whisk for stirring them.
If you don’t want to use a gift bag, arrange the Chocolate Pancake Mix into a big mixing bowl.

Chocolate Pancakes
Ingredients
- 1 cup all-purpose flour or use Bob's Red Mill Gluten-Free All-Purpose Flour
- 2 tsp baking powder
- 2 tbsp sugar
- 1 ½ tsp ground cinnamon
- 3 tbsp unsweetened cocoa powder
- ½ tsp salt
- 1 large egg
- 2 tbsp dark chocolate melted
- 1 ½ cups milk or water
- 2 tbsp oil
Instructions
- Mix all the dry ingredients in a medium bowl.
- Form a well in center of the dry ingredients. Add the egg, melted chocolate, oil and water to the well. Add more water if you like thinner pancakes.
- Stir just until mixed. Do not over mix or your pancakes will be tough.
- Preheat a lightly greased non-stick skillet or griddle over medium-low heat.
- Pour small amounts of batter, based on the size pancake you want, into the skillet or griddle.
- Cook until bubbles form the top of the batter and start popping.
- Flip to the other side and cook until pancake center springs back lightly when touched on top. Or you can insert a toothpick and it comes out clean.
- Serve with your choice of toppings.
