Slow Cooker Cooking: Chicken Tacos
With Hubby working out-of-town for about three months now, we have lived out of a hotel room more than living at home. We have a fridge and microwave, so eating out or sandwiches, salads, microwave food and takeout have been the story for food. I have to admit to missing home cooking. Especially knowing I have put on a couple of pounds from not eating as well. It has also made it hard to cook and post, so I do apologize for being missing in action for so long.
This past weekend I hauled the crock pot up with us to the hotel. Time for some slow cooking. I will miss the advantage to browning the meat ahead of time, but being able to eat homemade food outweighs that complaint.
Cooking in a hotel room has its issues such as being very careful not to make a big mess. Not that I am a huge mess at home but at least I can drop stuff on the floor without worrying about carpet and have a regular sink to clean up in. I am still for it, since we get to eat regular food that is not made by someone else.
The first dish out of the crock pot is Chicken Tacos. Please excuse my less than sexy pictures. I am not home with extra lighting and props but hopefully they look tasty enough for you to give them a try anyway. Anyway back to my tacos!
Getting boneless, skinless chicken thighs from the market takes out the work of needed to deal with cleaning up the chicken. I use dark meat, so it does not dry out. A jar of minced garlic once again gives homemade without the work. You can also buy onions and peppers already cut up to help with the prep, but I used my trusty knife and cutting board to do my own. Cooking in a hotel room is definitely all about keeping the prep to a minimum but that can also work for a quick meal at home.
Of course, crock pot cooking is easy. Toss everything in the pot, turn it on and walk away for a few hours. Hubby came home to the room smelling like home cooked food, a situation he highly approved of and yummy chicken tacos with fresh guacamole. The tacos were awesome after so many days on not eating regular cooking. We piled them with guacamole, non-fat Greek yogurt, cheese and fresh veggies. Spicy, fun and tasty!
