Grilled Chicken with Chili Lime Cilantro Marinade
Wow, I am excited. We are one month from leaving on our trip and our car is up for sale. The timing is drawing close fast and I am working on getting the details finished up before we go.
I am excited because I am back sharing recipes with you. I will admit to missing you guys and sharing good food and ideas. I am also excited about the new direction we are taking Simply Sophisticated Cooking and our new travel blog Bags & Biscuits. Between the two, they are keeping me busy with getting content up and learning new things.
It has also been fun sharing new recipes and foods with our roommates, who also have a love affair with yummy food and clean cooking. No worries about processed foods in this house!
Summertime is lingering here in Denver but we already feel the cooler nights creeping in, so we’ve enjoyed grilling late summer dishes such as Grilled Chicken with Chili Lime Cilantro Marinade.
Light citrus summery flavors with just a bit of heat make our taste buds light up with joy. I get just a little melancholy as I realize summer is fading and the leaves will be falling soon.
I used crushed urfa and aleppo chilies in this marinade. I am not sure how readily available they but they are worth the investment of acquiring them from Savory Spice Shop, if you cannot find them in your location. The chilies are smokey, spicy but not overly spicy, deep depth of flavors with hints of sweetness. Hubby got them for me to try and I am in love. I use them on everything including in my taco mix.
I am going to miss my spices when we leave. I know I can get more where we are going but I am so spoiled from having such a collection of them. The fun part will be learning new ones!
