I have a love-hate relationship with Deviled Egg Season. And before you ask… yes, Deviled Egg Season is absolutely a thing.
It’s those days immediately after Easter when you open the fridge and find yourself staring down a dozen or so maybe or maybe not jewel-colored hard boiled eggs with absolutely no plan. You loved dyeing them. It was so much fun. And now… the gag reflex is setting in at the thought of eating one more plain hard boiled egg with a hint of salt.
If you got kids or grew up in a family with kids that celebrate Easter, you know exactly what I’m talking about.
Deviled eggs are my answer. And they are SO much better than you think, when they’re done right. Growing up in the southern US, deviled eggs were at every single gathering. Church suppers, pig pickings, Easter tables… someone always brought the deviled eggs. And honestly? I became that person who asks what’s in them before loading up my plate. Because not all deviled egg recipes are created equal.
