Fried Green Tomatoes with Goat Cheese and Roasted Red Pepper Coulis

Growing up in the Southern US, fried green tomatoes are often on the menu. So, when a gentleman in the local community garden shared some tomatoes from his vines, I couldn’t resist making a batch. Although this recipe is nothing like the fried green tomatoes I’ve eaten in the South. They have goat cheese!!!
Inspiration for this recipe came from the JustLuxe website. The minute I read the recipe, I was like ‘hell, YES. So, with red peppers from my garden, and those beautiful green tomatoes, I got to cooking.

Gluten-Free and Other Breadcrumb Options
This is an easy recipe to make gluten-free. Simply switch out the Panko breadcrumbs with your favorite gluten-free ones. Also, if you don’t have Panko breadcrumbs, use whatever breadcrumbs you have on hand. The Panko gives an extra crunch that is quite delightful. You could also get a lovely crunch using crushed corn flakes.



Roasted Red Pepper Coulis Substitution
Here’s not only a substitution, but a quick shortcut. If you don’t have time to make the coulis, swap for a jar of already made marinara. Or my recipe for homemade marinara. The dish will lack the slightly tangy taste but is still quite delicious with the sour of the green tomatoes.

Cooking Up the Fried Green Tomatoes
The biggest trick to this recipe is making sure the oil is hot enough or you’ll have soggy breading. So, make sure you use good oil, like peanut or a high-quality veggie oil, which can take the heat. And if you make the sauce ahead, you can focus on creating golden brown tomatoes.

Fried Green Tomatoes
Ingredients
- 5 medium-size green tomatoes sliced into 1/4″ slices
- 3 oz. goat cheese
- ½ cup flour for dusting
- 3 eggs whisked
- 1 ½ cups Panko breadcrumbs
- Sea salt and fresh ground pepper
- Peanut or Vegetable oil for frying for frying
Instructions
- Heat oil in deep fryer.
- Place about one tablespoon of goat cheese on the tomato slices. (I used my fingers to flatten the cheese down on the tomato slices so they would fry up evenly).
- Sprinkle with sea salt and pepper to taste.
- Dust each slice with flour, then dip into egg and finally into the Panko crumbs to coat.
- Fry slices in oil at 375° until golden brown. Lay finished slices on paper towels and repeat frying until done.

Roasted Red Pepper Coulis
Ingredients
- 2 Roasted Red Peppers skin on is okay
- 1 tsp. olive oil
- 1 small onion finely chopped
- 3 cloves garlic minced
- 1 400 gram can of Italian tomatoes
- ¼ cup large fresh basil leaves chopped
- Sea salt and pepper to taste
Instructions
- Sweat onions and garlic in a saucepan, over medium heat, for about two minutes before adding roasted red peppers, then cook until onions are translucent and soft.
- Add the tomatoes and simmer for about 10 minutes.
- Toss in chopped basil and cook for about two more minutes.
- Season to taste with salt and pepper before pouring into a food processor or using a stick blender and process until smooth.
- Check seasoning one more time and serve with the fried green tomatoes.
- This sauce is also tasty for dipping with crusty bread.
