Homemade Moussaka with Turkey, Lentils and Eggplant

Homemade moussaka layered with broiled eggplant, ground turkey, red lentils, saffron-spiced tomato sauce, and a creamy goat cheese yogurt topping. A lighter take on the Mediterranean classic. Feeds 12.

Eggplant Slices
- 3 large eggplant sliced about 1/2" thick
- salt
- 4-5 Tbsp olive oil
Meat Layer
- 2 tbsp olive oil
- ½ pound ground turkey
- 1 large onion finely chopped
- 1 medium-size zucchini grated
- 1 large-size carrot grated
- 4 cloves garlic minced
- 2 cups cooked red lentils drained
- ½ cup dry red wine
- 2 tsp fresh turmeric grated
- 1 tsp Savory Spice Shop baking spice or ground cinnamon
- ½ tsp ground cinnamon
- 1/2-3/4 tsp red pepper flakes
- 1 tsp dried basil
- 6-8 threads saffron
- 2 tsp Hungarian paprika
- 28 oz canned tomatoes
- Fresh ground black pepper to taste
Cheesy Yogurt and Basil Topping
- 1 cup plain yogurt
- 5 large eggs
- 2 oz goat cheese
- ½ cup pecorino romano
- ¼ cup fresh basil chopped
- 2 Tbsp all purpose flour
- Salt and pepper to taste
Potatoes
- 4-5 small Russet potatoes cooked and thinly sliced
Eggplant Slices
Salt the eggplant. Slice eggplants and sprinkle generously with salt. Place in a colander for at least 30 minutes — this draws out excess moisture and prevents a watery moussaka.
Rinse well and pat completely dry with paper towels.
Drizzle eggplant slices with olive oil and arrange in a single layer on baking sheets
Broil until lightly browned and slightly charred at the edges, about 4-5 minutes per side. Set aside — this can be done ahead.
Meat Layer
Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
Add ground turkey, grated zucchini, and grated carrot. Cook until turkey is cooked through, breaking it up as it cooks.
Add red lentils, canned tomatoes, garlic, turmeric, cinnamon, red pepper flakes, basil, saffron, and paprika.
Pour in the red wine and stir everything together. Simmer for 10-12 minutes until slightly thickened.
Season generously with salt and pepper. Remove from heat.
Cheesy Yogurt and Basil Topping
Lightly beat eggs in a large bowl.
Add yogurt, goat cheese, Pecorino Romano, basil, flour, salt, and pepper.
Beat until smooth and well combined. Refrigerate until needed.
Moussaka Assembly
Preheat oven to 350°F (175°C).
Lightly oil a 9x13 inch casserole dish. Layer the broiled eggplant slices evenly across the bottom.
Pour the meat sauce over the eggplant and spread evenly.
Layer the sliced cooked potatoes over the meat sauce.
Pour the cheesy yogurt topping evenly over everything.
Bake for 45-50 minutes until the top is golden brown and the moussaka is bubbling at the edges.
Rest before serving. Remove from oven and let rest for 15-20 minutes before cutting — this is non-negotiable. Cutting too early means the layers slide and you lose the beautiful cross-section.
Serve in generous squares with a green salad alongside.
Make ahead and storage: Moussaka genuinely improves on days 2 and 3 as the flavors meld and deepen. Make the full pan, refrigerate, and reheat slices as needed — covered in a 325°F oven for about 20 minutes or in a skillet over low heat. Freezes beautifully for up to 3 months; freeze in individual portions for easy weeknight meals.
The breakfast discovery: The hubby eats leftover moussaka for breakfast with an over easy egg on top. Not a one-time thing — every time we make it now, he's having it this way the next morning. The egg adds a rich creaminess to the sauce that makes it taste like a completely different dish. Highly recommend.
Gluten-free: Substitute a gluten-free all-purpose flour in the topping 1:1.
Vegetarian: Replace the turkey with additional red lentils, cooked barley, or farro. The saffron and spice profile carries the dish beautifully without the meat.
