Turkey and Black Bean Chili

A slimmed down spicy turkey and black bean chili full of warming veggies and goodness.

- 20 ounces ground turkey
- 3 Tbsp. olive oil
- Half large onion chopped
- 4 cloves garlic minced
- 1 large jalapeno chopped
- ½ large yellow/red/orange bell pepper chopped
- 2 small carrots shredded
- 2 medium-sized tomatoes or use 1 14 oz. can of diced tomatoes
- 8 ounces frozen corn
- 3 cups cooked black beans or use 2 14 oz. cans, drained and rinsed
- 1 tsp. ground cumin
- 1 Tbsp. chili powder
- ½ tsp. cinnamon
- ½ tsp. ground cayenne pepper
- ½ tsp. dried oregano
- Salt and pepper to taste
- 2 to 3 cups stock or water add to desired reach desired amount of juices
Brown turkey in a large stock pot over medium heat until cooked through.
Pour in olive oil. Add onion and cook for 3 to 4 minutes before adding garlic, peppers, carrots and tomatoes.
Cook and stir vegetables and meat until veggies are soft and tender.
Add spices and herbs. Cook and stir for a minute before adding frozen corn and black beans.
Pour in stock or water to reach desired consistency.
Allow chili to simmer for 8 to 10 minutes. adjust salt and pepper to taste.
Serve warm with tortilla chips, cheese and sour cheese, if desired.
