Goat Cheese, Basil, Tomato and Herb Bread Grilled Cheese Sandwich

Goat Cheese, Basil, Tomato and Herb Bread Grilled Cheese Sandwich for the ultimate ooey, gooey grilled cheese sandwich that tastes like you're eating tomato soup in your sandwich.
- 4 slices tomato and herb bread or your favorite bread
- 2 oz. soft goat cheese, divided
- 2 oz. aged goat cheese, sliced or grated, divided
- 4 - 5 large basil leaves sliced
- butter or olive oil to taste
Preheat large skillet over low heat. Melt butter or pour olive oil into skillet.
Lay the tomato and herb bread slices on a flat surface. Spread soft goat cheese on two of the slices. Layer the hard goat cheese and basil on the other slices. Press the bread slices together.
Place sandwiches into the preheated skillet and slowly cook, turning occassionally so you can monitor the brownness and evenly heat the cheese. I like to press the sandwich down, squishing the bread slices together as well. But it's a personal preference. If you don't like it squished, don't.
When sandwiches are at your desired doneness, remove to a plate. Allow grilled cheese sandwiches to rest a few mintues before eating so the cheese can set and cool a little so you don't burn your mouth.
Serve warm.
