Asian Turkey Lettuce Wraps with Peanut Sauce

Ginger, soy sauce, peanut butter, and chilies come together with minced turkey and crunchy carrots wrapped in lettuce leaves to make delicious spicy Asian Turkey Lettuce Wraps with Peanut Sauce.

Ingredients
  

  • 3 tbsp soy sauce
  • 1 ½ tbsp rice vinegar
  • 1 tbsp sesame oil
  • 3 tbsp creamy peanut butter
  • 1 ½ tbsp honey
  • 2 tbsp water
  • 1 ½ - 2 tbsp chili paste
  • 1 tbsp fresh ginger minced or finely grated
  • ½ tbsp hoisin sauce
  • 1 tbsp veggie oil divided
  • ½ medium-size onion finely chopped
  • 3 cloves garlic minced
  • 1 lb ground turkey
  • juice from half a lime
  • 1 cup carrots diced
  • ½ cup green onion tops sliced
  • ½ cup cilantro chopped
  • 1-2 hearts Romaine or green leaf lettuce leaves separated, washed, and dried

Instructions
 

  • Combine soy sauce, rice vinegar, sesame oil, peanut butter, honey, water, chili paste, ginger, and hoisin sauce in a microwave-proof container.
  • Microwave on high for 2 to 3 minutes, stirring often, until peanut butter is melted and combines into the sauce. Set aside until needed.
  • Heat half tablespoon veggie oil in a medium-size skillet on medium-high heat. Add the onion and cook until soft. Toss in the garlic and cook until fragrant.
  • Add minced turkey and cook until meat is cooked through.
  • Pour in prepared sauce. Stir well and cook the mixture until sauces thickens and clings to meat. Remove from the skillet and set aside.
  • Add the reserved oil to the skillet. When hot, add the carrots and sauté until crisp-tender.
  • Return the meat mix back to the pan and stir in the sautéed carrots, green onions, and chopped cilantro. Serve immediately or at room temperature on prepared lettuce leaves.
