This beautiful soup is loaded with cauliflower (of course!), zucchini, fennel, leeks and avocado with coconut milk, making it a gorgeous spring green color. It’s seasoned with just a hint of heat, lots of fresh herbs and ginger, saffron, turmeric and a hint of Chinese five spice.

While the Spring Green Cauliflower Soup is beautifully healthy, it tastes sinfully delicious, almost like it’s loaded with cream (which it’s not!). The pureed cauliflower and avocado give it the silky, creamy texture and flavor.

And it’s completely vegetarian. Even vegan if you use veggie stock in the place of the chicken stock.

And for the final step, pour the soup carefully into a blender or food processor or use an immersion blender to puree the soup until it’s smooth.

Served hot or cold, the Spring Green Cauliflower Soup is great either way. Try topping with Parmesan croutons for wonderful added crunch.

And don’t be afraid to experiment. While I didn’t use carrots in this recipe, I can see them as a wonderful addition. Add you favorite veggies or leave out the ones you don’t. Play with the herbs and spices. And if you want to keep the costs down, skip the saffron and add a hint of paprika.

Instructions
  1. Heat olive oil in a large stock pot over medium heat.
  2. Add leeks and onions and cook for 3 to 4 minutes before adding garlic, fresno chili and the chopped fennel to the pot.
  3. Toss red chili flakes, turmeric, coriander and Chinese five spice in the pot, stir well and continue cooking for 2 to 3 more minutes.
  4. Drop in zucchini, grated fresh ginger and cauliflower. Pour in stock and coconut milk. Bring to a light boil and reduce to a simmer.
  5. Simmer until vegetables are soft, approximately. Add avocado, saffron and fresh herbs.
  6. Blend soup until smooth using an immersion blender or pour into a food processor or blender.
  7. Place back on the stove and simmer for 3 to 4 more minutes.
  8. Season to taste with salt and pepper.
  9. Serve hot or cold, garnished with fresno chili or avocado slices and chopped fresh herbs, if desired.
