Raspberry Basil Bacon Jam
Delicious salty bacon and bourbon paired with the sweet heat of roasted chilies, raspberries, tangy balsamic vinegar, caramelized onions and lots of fresh basil.

  1. Cook bacon in a large pan over medium-low heat until lightly brown and crisp. Remove bacon from the pan.
  2. Remove half of bacon fat from the pan and set aside. Add onions and balsamic vinegar to the pan and slowly cook over low heat until caramalized.
  3. Add poblano and fresno chilies, garlic, star anise, paprika, coriander, cinnamon and black pepper to the pan. Stir and heat through until you smell the spices.
  4. Pour white vinegar, brown sugar, bourbon and raspberries into the pan. Cook and stir for about 4 to 5 minutes or until you no longer smell the alcohol burning off.
  5. Slowly cook the mixture until the bacon jam is reaching your desired thickness. Remove from the heat and stir in the chopped basil. Season to taste with salt.
  6. Allow bacon jam to cool completely. Store in the fridge.
  7. Serve on hamburgers, sandwiches or with crackers and cheese. Enjoy!
