Instructions
  1. Sift together the dry ingredients in a medium-size bowl. Set aside.
  2. Using a mixer, cream together the sugar and margarine until fluffy, about 2 to 3 minutes. Beat in the egg, orange juice and molasses. Gradually add the dry mix, until mixed well.
  3. Cover the bowl with plastic wrap and place in the fridge for at least an hour or longer.
  4. Preheat oven to 350° F. Line baking sheets with parchment paper.
  5. Remove mix from the fridge and shape dough into 1 tablespoon size balls, rolling in sugar.
  6. Place the balls onto the cookie sheets, flattening slightly.
  7. Bake for 8 to 10 minutes or until edges are slightly golden brown. Remove and allow cookies to cool for 2 to 3 minutes on sheets before removing to a wire rack to cool completely.
