Simply Sophisticated Cooking | Raspberry Basil Bacon JamI was so bad this week and yet oh so good because I made Raspberry Basil Bacon Jam for our Memorial Day weekend hamburgers (although I’m thinking crackers with a nice brie and a little bacon jam sound delish right now).

Raspberry Basil Bacon Jam is something you can’t even claim is healthy. You could try to pretend if you count all the fresh peppers, raspberries and basil. And of course, the balsamic vinegar contains plenty of antioxidants for helping cut the bacon fat. But let’s be realistic, you eat bacon jam because you love bacon.

This recipe transforms one and a half pounds of smokey bacon into a sweet, spicy sinfully delicious jam for topping burgers, crackers, and cheese, or whatever. Just picture poblano peppers, fresno chilies, raspberries, caramelized onions, fresh basil, star anise, coriander, balsamic vinegar and lots of bourbon all fusing into a canopy of flavors that your taste buds will love.

So you can imagine how much I’m looking forward to eating a burger with this fantastic Raspberry Basil Bacon Jam on it very soon (so much for my crackers and cheese with a glass of wine right now).

Raspberry Basil Bacon Jam Yum
Delicious salty bacon and bourbon paired with the sweet heat of roasted chilies, raspberries, tangy balsamic vinegar, caramelized onions and lots of fresh basil.

Simply Sophisticated Cooking | Raspberry Basil Bacon Jam
  1. Cook bacon in a large pan over medium-low heat until lightly brown and crisp. Remove bacon from the pan.
  2. Remove half of bacon fat from the pan and set aside. Add onions and balsamic vinegar to the pan and slowly cook over low heat until caramalized.
  3. Add poblano and fresno chilies, garlic, star anise, paprika, coriander, cinnamon and black pepper to the pan. Stir and heat through until you smell the spices.
  4. Pour white vinegar, brown sugar, bourbon and raspberries into the pan. Cook and stir for about 4 to 5 minutes or until you no longer smell the alcohol burning off.
  5. Slowly cook the mixture until the bacon jam is reaching your desired thickness. Remove from the heat and stir in the chopped basil. Season to taste with salt.
  6. Allow bacon jam to cool completely. Store in the fridge.
  7. Serve on hamburgers, sandwiches or with crackers and cheese. Enjoy!
