Pear, Chocolate and Walnut Olive Oil Bread

I love quick sweet breads.

They’re easy to make and perfect for both breakfast or dessert. The trick to is making them just sweet enough without being over sweet, so they pair well with a cup of coffee or tea. And be slightly on the healthy side.

My Pear, Chocolate and Walnut Olive Oil Bread fits the bill perfectly.

It’s made with half whole wheat flour, non-fat Greek yogurt, lots of yummy fall pears, a little chocolate (chocolate is always part of a healthy diet!), walnuts and beautiful olive oil.

Pear, Chocolate and Walnut Olive Oil BreadThe sweetness of the pears and the chocolate help balance the reduced sugar in the bread so it’s not lacking in sweetness in any way, but at the same time, it’s not oversweet.

While I didn’t add any fresh herbs to the bread, I could easily see rosemary, sage or thyme complimenting the flavors wonderfully. In fact, I think next time I make it, I’ll add in the herbs.

The bread will also work with apples in you prefer or use a mixture of apples and pears. And while I loved the walnuts because of the slightly bitter, earthy flavors, you could switch in pecans.

You can substitute regular plain yogurt for the Greek yogurt or if you really want to get creative, an equal amount of overripe bananas or even a pumpkin or fall squash puree will work great as well. It’s about putting in something with a similar texture and moisture level.

Pear, Chocolate and Walnut Olive Oil BreadIf you want to boost the health levels, try tossing in a couple of tablespoons of flax or a half a cup of mixed seeds such as pumpkin, sunflower, hemp or poppy.

And if you want a solely whole wheat cake for more health benefits, consider using the whole wheat pastry flour instead of regular whole wheat flour so as not to make the cake too dense.

Even the spices are changeable. If you don’t have Chinese five spice, use another teaspoon of cinnamon. Or use a spice mix such as apple pie or pumpkin pie. Also good would be a mixture of cardamom, nutmeg, black pepper and ginger. Just consider what flavor profiles work together and add what you have on hand.

Hubby and I loved the flavors of the Pear, Chocolate and Walnut Olive Oil Bread much better on the day after making it. On the day of, the pear taste wasn’t coming through at all, but the next day it was front and center as intended. So if you can resist eating it the first day, wait a day for a better flavor profile.

Pear, Chocolate and Walnut Olive Oil Bread
  1. Preheat oven to 350 F or 180 C. Lightly oil or baking spray an 8 x 8 baking pan. Set aside until needed.
  2. In a large mixing bowl, whisk together flours, baking powder, salt, Chinese five spice and cinnamon.
  3. Add the sliced pears, chocolate chips and walnuts to dry mix, stirring to coat.*
  4. In another bowl, whisk together the eggs and sugar, before adding the yogurt and oil. Whisk until well mixed.
  5. Add the wet mix into the dry mix, stirring together just until mixed. Do not overmix.
  6. Pour the batter into the prepared pan and bake for 35 to 45 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes then remove to a wire rack to finish cooling.

* Adding things like pears, chocolate chips and the walnuts to the dry mix helps to keep them evenly distributed throughout the cake instead of sinking to the bottom.
