It’s officially spring, my favorite time of the year. I love the feeling of renewal and hope spring brings. It’s like winter wiped the slate clean and there’s a chance to start over.
If you’ve allowed yourself to slip on your New Year’s resolutions or your commitment to a Better You, the spring is also a great time to get back on track. Or maybe you’ve been waiting to set goals for yourself. Stop waiting. Spring is a great time to get started affirming how important you are and that your goals are important.
Spring also reminds me of bright fresh green because of the beautiful growing green things emerging from their winter hibernation. I start craving lighter greens prepared with a rainbow of colors instead of the heavier winter root vegetables. And the more I eat of them, the more I want.
Springtime brings crops of all different shades of green. Avocado, spring kale, asparagus, baby green peas, pea shoots, fresh herbs, baby spinach and lettuce are just a few of the varying shades of green you can eat. I love to combine several of them into one dish.
