Everywhere the hubby and I go, people are hacking and coughing. We just look at each other and cringe, figuring that it’s just a matter of time before we both are sick as well. But we do have a secret weapon. My special voodoo chicken soup!

And even if we do end up sick, we eat Voodoo Chicken Soup and feel better faster.

Either way, it really does work. It can assure you this soup is a far cry from the canned chicken noodle soup my mom fed me growing up.

You easily could start with already made chicken stock but you’ll lose many of the magical properties. Homemade is the way to go. It’s also a great time to clean out the bottom fridge drawers of all those slightly less than happy leftover veggies. That being said, you don’t want to skimp on this broth. You need plenty of fresh, healthy vegetables; otherwise, the soup isn’t going to be powerful enough to fight the flu.

Instructions
Voodoo Stock
  1. Place all ingredients in a large stock pot. Cover meat and vegetables with water.
  2. Reduce to a simmer. Simmer and cook for at least an hour.
  3. Remove from heat and strain broth. Set aside or refridgerate stock until needed. Stock can also be made ahead and frozen until needed.
Voodoo Chicken Soup
  1. Brown chicken thighs in olive oil in a large stock pot over medium heat. Remove from pot and set aside.
  2. Add shallots, cook for about two minutes before adding garlic, turnips, tumeric, Cantanzaro herbs and bay leaves.
  3. Place browned chicken thighs back in the pot and pour in the chicken stock.
  4. Bring to a boil. Reduce heat to a simmer and cook until chicken thighs are tender.
  5. Add carrots and mushrooms to pot, while removing the chicken to a plate.
  6. Shred chicken, disposing of the skin and bones. Add shredded chicken back to the pot. Season with salt and pepper.
  7. Continue to simmer until carrots are tender. Turn heat off. Drop in the green peas.
  8. Serve soup with your choice of noodles or rice. I like to add the noodles and soup as desired instead of cooking in the soup.

Shortcut Alert: If you don't have time to make the Voodoo broth, use an excellent quality chicken broth instead.
