Whole Grain Salad with Cranberries and TJ's SoyatashMy recipe for Whole Grain Salad with Cranberries and Soyatash is great anytime of the year but it does look so seasonal with plenty of red and green for the holidays.

It’s also a nice break from all the heavier foods served during the holiday season. And it’s easy to make.

It uses at least two items from Trader Joes, although you can get all the items there if you choose.

I love the Trader Joes Harvest Grains Blend. It’s full of couscous, orzo, red quinoa and baby chickpeas. YUM! And I’m completely addicted to the Trader Joes Soyatash.

And I’m completely addicted to the Trader Joes Soyatash. Edamame, red peppers and corn. So good to eat and so good in this salad.

Actually, this is one of my favorite salads to make. I just love how the grains, beans and veggies pop when I add the dried cranberries, cheese and citrusy lemon together. Add a little heat with the red pepper flakes and it works well as a standalone meal or to pair with other dishes.

This delicious salad is easy to turn into a homemade food gift kit.

Since the soyatash is frozen, I recommend buying a $5 Trader Joe gift cards to include in your kits. You could also include enough to cover the fresh carrots, garlic, greens and parmesan cheese or include them yourself if you are giving the gift quickly.

Mix together your measured portions of Trader Joes Harvest Grain Blend and red lentils. Divide into bags or containers.

Portion out the barley into a separate container because it takes longer to cook.

Whole Grain Salad with Cranberries and SoyatashPlastic wrap 1 teaspoon of red pepper flakes, so that your gift receiver can add as little or as much as he or she likes. Do the same with the dried cranberries.

Bag everything together or package it into a mix serving bowl with serving spoon.

Not only is this awesome salad good for giving as homemade gift kit but it works well to make up to take as your dish for the holiday get togethers.

A Trader's Joe's special Whole Grain Salad with Cranberries and Soyatash using the Harvest Blend Grain Mix, Soyatash, carrots, dried cranberries, greens and parmesan cheese.

Instructions
  1. Cook barley in 1 cup water until al dente, about 25 minutes.
  2. Blanch Trader Joe's soyatash in boiling water for about 3 minutes. Remove from water and drain. Pour into a large bowl.
  3. Mix red lentils with Trader Joe's Harvest Grains Blend and cook together in recommended water for ten minutes. Put chopped carrot and garlic into the pot with the couscous blend during the last 3 to 4 minutes of cooking.
  4. Add cooked Harvest Blend to the soyatash along with cooked barley.
  5. Mix in dried cranberries, cheese, olive oil, lemon juice, vinegar, salt, pepper and red pepper flakes. Allow flavors to meld for at least 10 minutes before serving.
  6. Serve at room temperature.
Recipe Notes

Would also be tasty with fresh herbs such as mint, basil, cilantro or rosemary.
