Our DIY food kit for Day 2 is a holiday inspired Chocolate and Cranberry Biscotti.

While most of us in the US associate biscotti with the double baked hard cookie that we dip into coffee or drinks, biscotti is actually the Italian word for cookies. This means you already know at least one Italian word!

Chocolate and Cranberry BiscottiMy Chocolate and Cranberry Biscotti are the traditionally thought of biscotti. Although you can just drop the drop onto a cookie sheet as drop cookies and you’ll have lovely tasty soft cookies if you prefer them instead of the harder cookie.

It is a fun recipe and pretty versatile if you want to switch things up. Add nuts or I even use fresh cranberries instead of dried sometimes. I do recommend using dried cranberries for the food kits because it makes it easier to keep without being in the fridge. And if you don’t like cranberries, use cherries or raisins or another dried fruit.

Biscotti also makes a great already baked gift as well.

And because these are holiday flavored, they are fun to send to the office or work for the holiday Christmas parties.

Another fun thing about my Chocolate and Cranberry Biscotti is they are made mostly out of whole wheat flour. You could make them completely using whole wheat flour and they are just as tasty but I felt they became a little dense in texture.

Chocolate and Cranberry BiscottiThe kits are easy to assemble. You can layer the ingredients into mason jars, give-away plastic containers with lids or ziplock bags. Pop them into a pretty gift bag and you’re all set with a great gift. It’s also easy to make several at once.

When making the Chocolate and Cranberry Biscotti, mix all the dry ingredients or layer into a jar. Add a small bottle of vanilla on the side and you have your biscotti kit.

If you want to add a little extra to the kits, consider adding items such as mixing bowls, parchment paper, kitchen spoons or even baking sheets.

It’s really all about having fun and giving gifts that keep on giving.

Chocolate and Cranberry Biscotti Yum
Get a taste of the holidays when you make Chocolate and Cranberry Biscotti filled with dark chocolate, sweet cranberries, orange zest and cinnamon.

Instructions
  1. Preheat oven to 350° F and line a large baking sheet with parchment paper.
  2. Add all the dry ingredients to a large bowl and mix well. Stir in the orange zest, chocolate chips and dried cranberries.
  3. Using a mixer or food processor, combine the eggs, vanilla, and water until mixed well. Slowly add the flour mix into the wet ingredients, until it forms a ball.
  4. Transfer the dough to a floured surface.. Gently pat the dough into a 6″ x 2″ log and place on the baking sheet. Bake for about 25 minutes or until the surface springs back when gently touched. Let cool for 15 to 20 minutes. Do not throw away the parchment paper.
  5. If you turned off the oven, preheat back to 350° F. Place the cooled log on a cutting board and using a serrated knife, such as a bread knife, cut the log into 3/4″ slices.
  6. Place the slices, cut side down, back on the parchment lined baking sheet (it’s okay to reuse the parchment paper from the first baking instead of getting new).
  7. Bake the biscotti slices for 10 to 20 minutes, flipping over the pieces at the halfway mark (baking time depends on how dry you like the biscotti. The longer the time, the dryer! I did mine for 12 minutes and it was perfect).
  8. Remove biscotti from the oven and allow to cool completely before serving..
